A quick and comforting dish featuring soft gnocchi enveloped in a rich and creamy tomato sauce, perfect for busy weeknights or family gatherings.

Ingredients

  • Gnocchi
  • Cream
  • Tomatoes (canned or fresh)
  • Garlic
  • Vegetable broth
  • Spinach
  • Parmesan cheese

Instructions

  1. In a large pot, cook the gnocchi according to package instructions. Drain and set aside.
  2. In the same pot, heat some olive oil over medium heat and sauté minced garlic until fragrant.
  3. Add the tomatoes and vegetable broth, bringing to a simmer.
  4. Stir in the cream and let it cook for a few minutes until slightly thickened.
  5. Add the spinach and cook until wilted.
  6. Toss in the cooked gnocchi and mix until well combined.
  7. Serve with grated Parmesan cheese on top.

Notes

Serve with garlic bread or a simple salad. Add fresh basil for extra flavor. Leftovers can be stored in an airtight container for up to three days.
