A heartwarming baked oatmeal packed with sweet apple flavor and warm cinnamon notes, perfect for breakfast or a comforting snack.

Ingredients

  • 2 cups rolled oats
  • 2 cups milk (or any non-dairy milk)
  • 2 medium apples, peeled and chopped
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup melted butter (or coconut oil for a dairy-free option)
  • 1 egg (or flax egg for a vegan option)
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup raisins or dried cranberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Combine rolled oats, baking powder, salt, and cinnamon in a large bowl.
  3. Mix the milk, melted butter, and egg (or flax egg) in another bowl until well combined.
  4. Stir the wet ingredients into the oat mixture until everything is blended.
  5. Fold in the chopped apples, and if you’re using nuts and raisins, add those in too.
  6. Pour this mixture into the prepared baking dish, spreading it out evenly.
  7. Mix together 1/4 cup brown sugar, 1/2 cup oats, and 2 tablespoons melted butter for the streusel topping, then sprinkle this on top of the oatmeal.
  8. Bake for 35-40 minutes or until the top is golden brown and set.
  9. Allow it to cool slightly before serving. Enjoy warm or reheated!

Notes

For extra sweetness, top with maple syrup or honey. Can be stored in the fridge for up to five days or frozen for three months.
