Ingredients

  • 8 oz chow mein noodles
  • 2 tbsp vegetable oil
  • 1 cup mixed vegetables (bell peppers, carrots, snap peas)
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 3 tbsp soy sauce
  • 2 green onions, sliced

Instructions

  1. Cook chow mein noodles according to package instructions; drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant.
  4. Toss in the mixed vegetables and stir-fry for 3-4 minutes until they are crisp-tender.

  6. Cook for an additional 2 minutes to heat through.
