A delicious breakfast casserole with crispy bacon, creamy cheese, and fluffy eggs on a bed of hash browns, perfect for brunches or family breakfasts.

Ingredients

  • 8 slices of bacon
  • 1 cup shredded cheese (cheddar or your choice)
  • 6 large eggs
  • 2 cups frozen hash browns
  • 1 cup milk
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the bacon until crispy in a skillet. Remove and crumble it.
  3. Whisk together the eggs, milk, salt, and pepper in a large bowl until combined.
  4. Grease a baking dish and layer the hash browns on the bottom.
  5. Sprinkle the crumbled bacon and cheese over the hash browns.
  6. Pour the egg mixture over the layers, ensuring even coverage.
  7. Bake in the preheated oven for 30-40 minutes or until the eggs are set and the top is golden.
  8. Let it cool slightly, garnish with green onions if desired, and serve warm.

Notes

For extra richness, add a dollop of cream cheese to the egg mixture before baking. This dish can be prepared the night before and refrigerated overnight before baking.
