Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter until well combined.
  4. Mix in the baking soda and a pinch of salt.
  5. Add in the sugar, beaten egg, and vanilla extract, mixing well until fully incorporated.
  6. Stir in the all-purpose flour until just combined. Avoid over-mixing to keep the loaf tender.
  7. Pour the batter into a greased loaf pan, smoothing the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let it cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.

Notes

For a deeper flavor, substitute sugar with brown sugar. You can also use melted coconut oil instead of butter for a dairy-free version.
