A delightful combination of marinated chicken, fresh veggies, and creamy tzatziki sauce atop quinoa or brown rice, bringing Mediterranean flavors to your dinner table.

Ingredients

  • 2 Chicken breasts
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 2 tablespoons Lemon juice
  • 1 teaspoon Oregano
  • Salt, to taste
  • Pepper, to taste
  • 1 Cucumber, diced
  • 2 Tomatoes, diced
  • 1 Red onion, sliced
  • 1 cup Feta cheese, crumbled
  • 1 cup Quinoa or brown rice
  • 1 cup Tzatziki sauce (yogurt, cucumber, garlic, dill)

Instructions

  1. Marinate the chicken breasts in olive oil, garlic, lemon juice, oregano, salt, and pepper for at least 30 minutes.
  2. Grill or bake the chicken until fully cooked, then slice into bite-sized pieces.
  3. Cook quinoa or brown rice according to package instructions while the chicken is marinating.
  4. Prepare the tzatziki sauce by mixing together yogurt, grated cucumber, minced garlic, and dill.
  5. In a bowl, layer the cooked quinoa or rice, sliced chicken, diced cucumbers, tomatoes, red onion, and crumbled feta cheese.
  6. Drizzle with tzatziki sauce to finish and serve!

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat chicken and add fresh toppings after reheating for a crisp texture.
