Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Cooking spray or additional butter for the pan

Instructions

  1. Whisk together the flour, sugar, baking powder, and salt in a mixing bowl.
  2. Combine the milk, egg, melted butter, and vanilla extract in another bowl.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined; a few lumps are perfectly okay!
  4. Preheat a non-stick skillet over medium heat and lightly grease it with cooking spray or butter.
  5. Use a heart-shaped cookie cutter to pour the batter onto the skillet, forming the pancakes.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes on each side.
  7. Serve warm with syrup, fresh fruit, or your favorite toppings.

Notes

For extra fluffy pancakes, let the batter rest for about 5 minutes before cooking. Make sure your skillet is hot enough to sizzle a drop of water.
