A cozy, soul-warming Italian soup packed with wholesome ingredients and flavors, perfect for chilly days or when you’re feeling under the weather.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, sauté until softened.
  3. Stir in the chopped carrots and celery, cooking for a few more minutes.
  4. Pour in the vegetable broth and add the diced tomatoes and oregano.
  5. Bring to a boil, then reduce heat and let it simmer for about 20 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

To speed things up, chop your veggies in advance or use a pre-chopped veggie mix. For a spicy kick, add red pepper flakes while sautéing.
