A hearty bowl filled with Mediterranean flavors featuring beef meatballs, crispy roasted potatoes, and a refreshing Greek salad.

Ingredients

  • 1 pound ground beef
  • 1/4 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large potatoes, diced
  • 2 tablespoons olive oil
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the ground beef, breadcrumbs, parmesan cheese, egg, garlic, oregano, salt, and pepper. Mix until just combined without overworking the meat.
  3. Form the mixture into meatballs and place them on a baking sheet, giving them a little space to breathe.
  4. Toss the diced potatoes with olive oil, salt, and pepper. Spread the potatoes on another baking sheet in a single layer.
  5. Pop both sheets in the oven and bake the meatballs and potatoes for about 25-30 minutes, or until the meatballs are cooked through and golden brown, and the potatoes are crispy.
  6. While they’re cooking, prepare the salad. In a separate bowl, combine cucumber, cherry tomatoes, red onion, feta, parsley, and lemon juice. Mix well.
  7. Serve the meatballs and crispy potatoes alongside the refreshing Greek salad for a delightful meal.

Notes

Feel free to swap the ground beef for turkey or a plant-based option. Pair with warm pita bread or drizzle tahini sauce for added flavor.
