A delightful pancake casserole layered with mixed berries and creamy yogurt, baked to golden perfection. Perfect for breakfast gatherings and lazy mornings.

Ingredients

  • 2 cups pancake mix
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (blueberries, strawberries, raspberries)
  • 1 cup yogurt
  • Maple syrup for serving

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. Mix together the pancake mix, milk, eggs, and vanilla extract until well combined.
  3. Pour half of the batter into the prepared baking dish.
  4. Layer the berries on top of the batter.
  5. Spread yogurt evenly over the berries.
  6. Pour the remaining batter on top of the yogurt.
  7. Bake for 25-30 minutes or until golden, and a toothpick comes out clean.
  8. Let cool slightly before serving and drizzle with maple syrup if desired.

Notes

For the fluffiest casserole, avoid overmixing the batter. Try adding cinnamon or nutmeg for extra flavor.
