A delightful breakfast casserole packed with juicy blueberries and custardy French bread, perfect for busy mornings and serving a crowd.

Ingredients

  • 1 loaf of French bread, cubed
  • 2 cups fresh blueberries
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Butter or cooking spray for greasing

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish with butter or cooking spray.
  2. Place the cubed French bread in the baking dish and sprinkle the blueberries on top.
  3. In a large mixing bowl, whisk together the eggs, milk, sugar, vanilla, cinnamon, and salt until well combined.
  4. Pour the egg mixture evenly over the bread and blueberries, making sure to soak the bread well.
  5. Let it sit for about 15–20 minutes to absorb the liquid.
  6. Bake in the preheated oven for 35–40 minutes, or until the top is golden brown and the casserole is set.
  7. Allow to cool slightly before serving. Enjoy warm!

Notes

For best results, use stale bread for better absorption. You can prepare the casserole the night before and refrigerate it until baking.
