A hearty mix of sausage, crispy hash browns, and gooey cheddar cheese that warms both the belly and the heart. Perfect for any breakfast occasion!

Ingredients

  • 1 lb sausage
  • 1 package (30 oz) frozen hash browns
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 12 large eggs
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the sausage over medium heat until browned, draining any excess fat.
  3. Combine hash browns, cooked sausage, cheddar cheese, onion, and bell pepper in a large bowl.
  4. Whisk together eggs, milk, salt, and pepper in another bowl.
  5. Pour the egg mixture over the hash brown mixture and stir to combine.
  6. Transfer to a greased 9×13 inch baking dish and spread evenly.
  7. Bake for 45-50 minutes until set and golden brown on top.
  8. Let cool for a few minutes before serving.

Notes

You can swap out the sausage for turkey or chicken sausage for a leaner option. Serve with fresh fruit, crispy bacon, or gravy for extra flavor.
