A simple recipe for fluffy and delicious scrambled eggs, perfect for breakfast or brunch.

Ingredients

  • 8 large eggs
  • 1 tablespoon half and half
  • 1/4 teaspoon Kosher salt
  • Generous pinch of black pepper
  • 1 tablespoon unsalted butter or your favorite oil

Instructions

  1. Add eggs, half and half, salt, and pepper to a mixing bowl and whisk vigorously until thoroughly mixed. Set aside.
  2. Heat a medium-sized non-stick sauté pan over medium heat and add butter. Swirl until the bottom is coated.
  3. Pour the egg mixture into the pan and let sit undisturbed for about 1 minute.
  4. From the outer edges, gently push the eggs toward the center, allowing uncooked egg to flow outward.
  5. Continue this until the eggs are no longer liquid.
  6. Reduce heat to medium-low and gently fold the eggs until cooked to your liking, about 3 minutes for a soft scramble.
  7. Remove from heat and serve immediately.
