Ingredients

  • 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 3 tbsp honey
  • 4 garlic cloves, minced
  • 1 tsp grated ginger
  • 1/2 tsp red chili flakes (optional)
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 8 oz noodles (rice noodles or egg noodles)
  • 2 green onions, chopped
  • 1 tsp sesame seeds (optional)

Instructions

  1. In a bowl, mix together the soy sauce, honey, minced garlic, grated ginger, and red chili flakes to create the sauce.
  2. Toss the chicken pieces in cornstarch until they’re evenly coated.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the chicken to the skillet and cook until golden and fully cooked through, about 6–8 minutes.
  5. Pour the sauce over the chicken, stirring to coat everything evenly. Let it simmer and thicken for 1–2 minutes.
  6. While the chicken is cooking, prepare the noodles according to package directions. Drain and toss them with a little oil to prevent sticking.
  7. Add the noodles to the skillet, tossing to combine with the chicken and sauce.
  8. Serve and garnish with chopped green onions and sesame seeds.

Notes

For a vegetarian option, swap chicken for tofu. You can also add vegetables like bell peppers or snap peas for extra flavor.
