Strawberry Banana Pancakes

Delightful pancakes combining ripe bananas and juicy strawberries for a fluffy breakfast treat.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 ripe banana, mashed
  • 1/2 cup strawberries, sliced

Instructions

  1. In a bowl, mix together flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, and melted butter.
  3. Combine the wet ingredients with the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay!
  4. Gently fold in the mashed banana and sliced strawberries.
  5. Preheat a skillet over medium heat and add a little butter to coat the pan.
  6. Pour 1/4 cup of the batter onto the skillet for each pancake. Leave room between each pancake, as they’ll spread a little.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown, about two minutes per side.
  8. Serve warm with syrup or additional fruit on top.

Notes

If the batter is thick, add a splash more milk for fluffier pancakes. Enjoy with a drizzle of syrup or a side of crispy bacon.
