Delightfully fluffy Strawberry Pancakes, perfect for a cozy breakfast or brunch.

Ingredients

  • 1 ripe banana
  • 2 ripe strawberries
  • 2 tbsp self-raising flour
  • 1 egg

Instructions

  1. Mash the banana and strawberries together in a bowl until well combined.
  2. Add the egg and self-raising flour to the bowl, mixing until you have a smooth batter.
  3. Grease a non-stick pan with butter and heat it over medium heat.
  4. Once the pan is hot, pour in two spoonfuls of the mixture for each pancake.
  5. Cook until you see air bubbles forming on the surface, then flip the pancakes and cook for another minute until they’re golden brown.
  6. Serve warm topped with powdered sugar or maple syrup.

Notes

Feel free to swap strawberries for other berries like blueberries or raspberries for a different flavor.
