A cheesy, savory dip perfect for gatherings, combining melted cheese with flavors of beer and zesty tomatoes.

Ingredients

  • 1/2 lb ground beef
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)
  • 3/4 cup pale ale
  • 1/2 cup pepper jack cheese, shredded
  • 16 oz Velveeta cheese, cubed
  • 1 (14.5 oz) can Rotel tomatoes, undrained
  • 1 cup black beans, drained and rinsed
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large skillet, brown the ground beef over medium-high heat, draining any excess grease.
  2. Season the beef with salt, pepper, and the optional red pepper flakes for a little kick.
  3. Pour in the pale ale and let it simmer, reducing by about half for 4-5 minutes.
  4. Lower the heat to medium-low, then add both the Velveeta and pepper jack cheeses. Stir until melted and smooth.
  5. Gently fold in the Rotel tomatoes, black beans, red onion, and cilantro. Cook for another 5 minutes until heated through.
  6. Serve hot with crunchy tortilla chips for dipping.

Feel free to swap the ground beef for ground turkey or a plant-based alternative.
