A comforting dish featuring fluffy gnocchi, fresh spinach, and creamy feta, perfect for busy weeknights or family gatherings.

Ingredients

  • 1 pound gnocchi
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: grated Parmesan cheese for serving

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  2. Add the fresh spinach to the skillet and sauté until wilted.
  3. In a separate pot, cook the gnocchi according to package instructions, then drain.
  4. Add the cooked gnocchi to the skillet with the spinach.
  5. Pour in the heavy cream and add the crumbled feta cheese, stirring to combine.
  6. Cook for an additional 3-5 minutes, until everything is heated through and creamy. Season with salt and pepper to taste.
  7. Serve warm, topped with grated Parmesan if desired.

Notes

For a lighter version, substitute heavy cream with half-and-half, or customize with your favorite cheese.
