Delicious and fluffy pancakes made with sweet potatoes, perfect for breakfast or brunch.

Ingredients

  • 1 cup mashed sweet potatoes
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Cooking spray or additional butter for the skillet

Instructions

  1. In a large bowl, mix the mashed sweet potatoes, milk, and egg until smooth.
  2. In another bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  3. Gradually add the dry ingredients to the wet ingredients and stir until combined. Just remember, don’t overmix!
  4. Heat a skillet or griddle over medium heat and lightly grease it with cooking spray or butter.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  7. Serve warm with your favorite toppings, like maple syrup, fresh fruit, or whipped cream.

Notes

Serve with maple syrup, fresh berries, or chopped nuts. Great for freezing leftovers.
